  • Preheat oven to 425℉ (220℃)
  • Wash and peel 1 lb carrots. If the carrots are thick, cut them in half, lengthwise.
  • Combine 2 tablespoons Olive Oil, 2 tablespoons honey, 1 tablespoon balsamic vinegar, 1/2 teaspoon salt, 1/4 teaspoon Black Pepper, 1/2 teaspoon dried thyme, and 2 cloves Garlic, minced in a large bowl. Mix well.
  • Arrange the carrots in a single layer on a baking sheet. Drizzle the glaze over until they are evenly coated on all sides.
  • Cook for 25-30 minutes or until the carrots are tender.
  • Remove from the oven and let cool for 1 min.
  • Garnish with Fresh Parsley and serve hot!
