Easy Pomegranate Chicken Recipe with Honey Glaze and Root Vegetables

Pomegranate Chicken Recipe with Roasted Root Vegetables

Introduction: Pomegranate Chicken Recipe

This Pomegranate Chicken recipe is a great meal to make on busy weeknights in the fall. Pomegranate Chicken is a warm, rich, and hearty dish perfect for fall and winter nights. The seasonal dish combines the tanginess of pomegranates with the hearty taste of chicken. When served with roasted root vegetables, this chicken recipe creates a very filling meal!

How to Select the Best Pomegranates

Selecting high-quality produce can completely transform this dish. I recommend getting whole pomegranates from the grocery store to use as garnish and to create fresh pomegranate juice. While this does require a bit more prep work, using whole pomegranates can completely elevate this dish.

How To Tell If a Pomegranate Is Ripe

When shopping, look for pomegranates that are heavy for their size with a deep, vibrant red color. Look for pomegranates that feel firm, indicating that the arils are juicy!

Ingredients of Pomegranate Chicken

Our Pomegranate Chicken Recipe combines tart and hearty flavors to create a main course that is perfect for fall nights! To make this pomegranate chicken recipe, the following ingredients are needed:

  1. Chicken Thighs: Look for organic, free-range chicken for the best quality.
  2. Pomegranates: Fresh pomegranates are at the heart of this dish. Look for ripe pomegranates when shopping. These can be used as garnish and to make the marinade.
  3. Root Vegetables: I’ve opted to use parsnips, sweet potatoes, and carrots in this dish. You can substitute these with any fall or winter root vegetables of your choosing. Look for high-quality fresh vegetables when shopping for the best taste!

Tools to Make Pomegranate Chicken

The right tools can make cooking a fun and enjoyable experience. This dish is designed to be made at home using standard cookware found on our Kitchen Essentials List. Specifically, the following items are necessary:

  1. Pastry Brush, Grill Brush, or Basting Brush: A pastry brush/basting brush helps evenly coat the chicken with the glaze.
  2. Baking Dish: Both the chicken and vegetables will cook in the oven.

Pomegranate Chicken Recipe Overview

As with all of the recipes in our recipe index, this dish is designed so that anyone can make it! Making Pomegranate Chicken with Honey Glazed Root Vegetables involves a few simple steps:

Step 1: Prepare the Vegetables

Before beginning, prep all vegetables. The root vegetables should be washed, peeled, and sliced into bite sized pieces. If using fresh pomegranates, make sure to properly seed them.

Step 2: Marinate the Chicken

In a small bowl, combine pomegranate juice, olive oil, garlic, and seasoning. Add the chicken and allow it to marinate for at least 30 minutes.

Step 3: Bake Chicken and Vegetables

Bake the chicken and vegetables together in one large baking pan. Cook until the chicken reaches a safe internal temperature and the vegetables are soft and tender. In the last few minutes of baking, glaze with a mixture of honey and pomegranate juice.
